Iki Jime (or Ikejime) is a humane, traditional Japanese method for quickly killing fish to preserve meat quality by instantly destroying the brain and nervous system, preventing stress, muscle spasms (rigor mortis), and the buildup of lactic acid, resulting in better texture, flavor (umami), and longer shelf life for the fish. It involves spiking the fish's hindbrain and then inserting a wire into the spinal cord to stop all movement and nerve activity, keeping the blood in the gut cavity for better presentation
